These vegan mint chocolate cookies and cream donuts are soft, chocolatey, protein-packed, and baked instead of fried. An easy, healthy donut recipe perfect for breakfast, snacks, or dessert.

If you’re a fan of mint chocolate desserts, these vegan mint chocolate cookies and cream donuts are about to become your new obsession. They’re rich, fudgy, perfectly minty, and packed with plant-based protein for a healthier twist on a bakery favorite.
Made with vegan chocolate mint protein powder, cocoa powder, crushed chocolate sandwich cookies, and naturally sweetened with date syrup, these baked protein donuts are soft, fluffy, and full of chocolatey goodness in every bite. A simple chocolate vanilla glaze and extra cookie crumbles take them over the top without requiring hours in the kitchen.
Ingredients:
For the Donuts:
- 1 cup all-purpose flour, gluten-free flour blend, or oat flour
- 1/2 cup PEScience Mint Chocolate Vegan Protein Powder or True Nutrition Chocolate Mint Cookie Protein (code HEALTHYHELPER saves on both!)
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup almond milk (or any plant-based milk of your choice)
- 1/4 cup date syrup (code HEALTHYHELPER saves!)
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract (adjust to taste)
- 1/4 cup crushed vegan chocolate sandwich cookies (like Oreo cookies, check for vegan certification) + extra for topping
For the Chocolate Vanilla Icing:
- 1 cup powdered sugar or sugar-free powdered sweetener
- 1 tbsp cocoa powder
- 2-3 tbsp almond milk (or any plant-based milk)
- 1/2 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a donut pan with coconut oil or non-stick cooking spray.
- In a large bowl, whisk together the flour, vegan protein powder, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk together the almond milk, syrup, melted coconut oil, vanilla extract, and peppermint extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the crushed vegan chocolate cookies into the batter.
- Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.
- Bake for 12-15 minutes, or until a toothpick inserted into the donuts comes out clean.
- While the donuts are baking, prepare the vanilla icing. In a small bowl, whisk together the powdered sugar, almond milk, and vanilla extract until smooth and creamy. Adjust the consistency by adding more powdered sugar or almond milk as needed.
- Once the donuts are baked, remove them from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.
- Once the donuts are completely cool, dip the tops into the vanilla icing or drizzle the icing over the donuts using a spoon. Sprinkle with extra crushed vegan chocolate cookies if desired.
- Let the icing set for a few minutes before serving. Enjoy your Mint Chocolate Cookies and Cream Protein Donuts!
