This sausage sweet potato sheet pan meal is what happens when cozy comfort food meets easy weeknight dinner energy. Sweet potatoes, Brussels sprouts, juicy pears, savory chicken sausage, and crunchy pecans all roast together with rosemary and thyme for a meal that tastes fancy but could not be easier.

Ingredients
- 2 packages Bilinski’s chicken sausage, sliced into 1/2 inch pieces
- 1 3/4 lbs Japanese sweet potatoes, cubed
- 1 1/4 lbs Brussels sprouts, halved or quartered
- 2 large red pears, chopped
- 2 tsp dried parsley
- 2 tsp dried thyme
- 2 tsp dried rosemary
- Salt and pepper, to taste
- 1 shallot, finely chopped
- 1/4 cup olive oil
- 2 tbsp date syrup (code healthyhelper saves!)
- 1 tbsp Dijon mustard
- 3/4 cup whole raw pecans
Instructions
- Preheat oven to 425 degrees F.
- Place the sweet potatoes, Brussels sprouts, and pears into a large mixing bowl.
- Whisk together the shallot, herbs, olive oil, Dijon mustard, date syrup, salt, and pepper in a small bowl.
- Pour the dressing over the vegetables and toss until evenly coated.
- Spread onto a parchment-lined baking sheet and roast for 40 minutes.
- Add sausage and pecans, toss everything together, and roast for another 15 minutes.
- Serve warm.
