Ingredients

- 1/4 cup almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 cup warm water
- 1 cup Medjool dates, pitted
- 1/2 teaspoon pure vanilla extract
- 1/3 cup unsweetened vegan chocolate chips
Instructions
- Preheat your oven to 350 F and line a baking sheet with parchment paper.
- In a blender or food processor, combine the warm water and Medjool dates. Blend until smooth and thick like a paste.
- In a medium bowl, whisk together the oat fiber, almond flour, baking soda, and sea salt.
- Add the date paste and vanilla to the dry ingredients and stir until a soft cookie dough forms. Keep mixing until fully combined.
- Fold in the chocolate chips.
- Roll into 10 evenly sized balls and place on the prepared baking sheet. Gently press each one down to slightly flatten.
- Bake for 11 minutes. They will look underdone, and that is expected.
- Remove from the oven and let the cookies cool completely on the baking sheet so they firm up and develop the right texture.
