Indulge in these soft-baked, high-fiber chocolate chip cookies that are both vegan and gluten-free. Made with oat fiber and naturally sweetened with dates, these cookies offer a high-fiber, healthy treat perfect for satisfying your sweet tooth.
Why You’ll Love These Cookies
- High in Fiber: Oat fiber provides a significant fiber boost, promoting digestive health and keeping you feeling full longer.
- Vegan & Gluten-Free: Suitable for various dietary preferences and restrictions.
- No Added Sugar: Sweetened naturally with pureed dates, eliminating the need for refined sugars.
- Quick & Easy: Ready in under 15 minutes, making them a convenient homemade treat.
What is Oat Fiber?
Oat fiber is derived from the outer hull of the oat grain. It’s pure insoluble fiber, meaning it passes through the digestive system without being absorbed, aiding in digestion and providing a feeling of fullness. Additionally, oat fiber is gluten-free, making it an excellent ingredient for those with gluten sensitivities. I recommend Oat Fiber from NuNaturals. Use code HEALTHYHELPER to save $$!
High-Fiber Chocolate Chip Cookies
- Author: Kaila Proulx
- Prep Time: 5 mins
- Cook Time: 11 mins
- Total Time: 16 mins
- Yield: 10 cookies 1x
- Category: Sweet Snacks
- Diet: Vegan
1 cup oat fiber (HEALTHYHELPER saves $$)
1/2 tsp baking soda
1/4 tsp sea salt
1 cup of warm water + 1 cup of medjool dates, pureed
1/4 tsp pure vanilla extract
1/3 cup unsweetened vegan chocolate chips (you can measure with your heart here)
Cook Mode Prevent your screen from going dark
Instructions
Preheat oven to 350 F. Combine all dry ingredients in a medium bowl, then stir in the date paste and vanilla to form dough. Keep stirring until a soft cookie-dough texture is achieved. Roll into 10 balls. Place on a cookie tray and press down to flatten slightly. Bake for 11 minutes. They will look underdone. Remove from the oven anyway, and let them cool completely on the baking sheet to firm up.
Tips for Perfect Cookies
- Measuring Oat Fiber: Weigh oat fiber with a kitchen scale for accuracy since its lightweight texture easily compacts.
- Date Selection: Ensure your Medjool dates are fresh and soft. You can soak them in warm water for 10 minutes before blending if they seem too dry.
- Storage: Store cookies in an airtight container at room temperature for up to a week. For extended freshness, refrigerate them.
Enjoy these delightful cookies as a healthy snack or dessert. The unique texture and rich flavor of these cookies make them a standout treat that’s both nourishing and delicious.

Hi Kaila!!
So happy to have discovered you??? Excited for this recipe today! Quick question, may we omit dayes completely for less sugar? Thinking of subbing a tbs of maple syrup instead..or just stevia. Opinions whether that’ll ruin the cookie structure?
Thanks in advance ?

Hi Kruti!! Thanks for stopping by! The dates are definitely needed in these cookies. So for a lower sugar option…I would go with these! https://healthyhelperkaila.com/chunky-monkey-cookie-dough-bites/ Very similar and lower in fruit sugar! Hope you love them!
